How to Make Tomate du Saltambique From 'The West Wing'

In the latest episode of "Binging with Babish," a cooking series where home chef Andrew Rea recreates famous foods from films and TV shows, Andrew demonstrates how to make two interpretations of the decendant Tomate du Saltambique dessert mentioned in the "The Stackhouse Filibuster" episode (season 2, episode 17) of Aaron Sorkin's long-running political drama series, The West Wing.
"President Josiah Bartlet, apart from being a charismatic and noble leader of these United States, had a real thing for food. Be it the Butterball turkey hotline or pumpkin soup with cheese gnocchi, the man knew both good policy and food. If only he weren't a figment of Aaron Sorkin's imagination, much like this interpretation of Alain Passard's dessert tomato."
